Ashley Alexander, from Melbourne, goes by Gather and Feast online and revealed how to make her green-filled cheese toastie in a video posted to TikTok.
The cheesy toasted sandwich is packed with cheese and greens including broccolini, basil, rocket and zucchini.

Ashley starts by cutting up the broccolini and zucchini into small, fine pieces and roughly chopping up a handful of fresh basil and rocket leaves.
She then heats up a pan to medium heat with a glug of olive oil and sautés the greens with some chopped garlic and the zest of half a lemon.
After about two to three minutes on the heat, the greens start to look vibrant and Ashley takes them off the stove and transfers the mixture into a bowl.
Ashley starts by finely chopping broccolini, zucchini and a handful of fresh basil and rocket leaves then sautés in a pans with garlic and lemon zest
She crumbles in feta, adds a handful of provolone cheese and mixes to combine.
The foodie then butters two slices of sourdough bread and flips them over so the spread is on the outside of the sandwich.
She adds a layer of grated provolone to one slice, tops with her green mixture, seasons with salt and pepper then places the second slice of bread on top.
To toast the sandwich, Ashley places it in a pan on medium heat and cooks each side for about three minutes until golden brown.
She adds crumbled feta and grated provolone cheese to the green mixture and puts it between two slices of bread with some extra cheese and toasts in a frying pan with butter
Recipe: Greens loaded toastie
Ingredients
3 stalks broccolini
1/4 zucchini
Small handful of rocket
Fresh basil leaves
Zest from 1/2 a lemon
20g feta cheese, crumbled
Small handful of grated provolone or another melty cheese
Salt and freshly cracked pepper to taste
2 slices of sourdough bread
Butter for spreading
Method
1. Finely chop the broccolini, zucchini, rocket and basil
2. Place a fry pan on medium heat, add some olive oil and the chopped herbs and vegetables
3. Next, add the garlic and lemon zest
4. Sauté on medium heat until vibrant green - roughly 2-3 minutes
5. Remove from the pan and add the crumbled feta and provolone
6. Butter two slices of sourdough bread then flip the bread so the butter is on the outside
7. Add a little shredded provolone then the green mixture to one slice of bread
8. Place fry pan on medium heat, add the sandwich to the pan and cook for roughly 3 minutes on each side
9. Sprinkle with salt and freshly cracked pepper

Ashley green loaded toastie video has attracted thousands of views, comments and likes across her TikTok and Instagram pages with many of her 343,000 followers keen to try the recipe.
'This looks and sounds amazing! I am definitely attempting to make this!' one viewer wrote.
'Oh, I’m going to make this one. Think I can make it with vegan feta,' another said.
'Ooo this is my type of food. Yum can’t wait to try this!' commented a third.
