As soon as the first packet of fresh cranberries appears in the stores I know that Christmas is really close. Cranberries are one of our favourite Christmas foods we love our Cranberry Sauce with Turkey on Christmas day, the Cranberry and Walnut Cookies my daughter makes for her Pops each year and then there is this. A Simple White Chocolate and Cranberry Fudge that is so easy the kids can make too!

Making Fudge with Kids
When I was young my grandmother would make fudge. She had a candy thermometerand it always seemed really complicated then I discovered how easy it was to make using either a Slow Cooker or a double boiler.
When my daughter was a preschooler for Christmas gifts for her teachers we made Slow Cooker Chocolate Fudge and since then it has become one of our go-to gifts for friends, family and teachers each year.
With the double boiler method, I tried this recently in a cooking class at my son’s school and the results were fantastic. Because the fudge only takes a little while to make the kids were able to work in groups and produce some different flavours of fudge (check at the end of this recipe for other Fudges you can make with or without the kids) which were then sold to raise money for the school. A simple way that all the kids in the class could be involved.
Easy White Chocolate Fudge with Dried Cranberries
A word of warning this fudge is EXTRA SWEET. If you aren’t keen on White Chocolate then we have a “science experiment” that makes a less sweet Chocolate, Cranberry and Walnut Fudge. Yes, it really is a science experiment just an edible one and the fudge is delicious too!

Ingredients
- 525 g white chocolate chips
- 397 g can of sweetened condensed milk
- 180 g dried cranberries
Instructions
Line an 8-inch square baking tin with greaseproof paper. Set aside.
Using a double boiler, combine white chocolate chips and condensed milk and mix until smooth.
Add in the dried cranberries and stir to mix.
Pour fudge into a prepared tin.
Sprinkle some spare cranberries onto the top of the fudge.
Allow to set overnight before cutting into 1-inch squares.
